Italian Breakfast Wrap

A little zing in the morning isn’t a bad thing. As I’ve said before, my wife and I have been told by our dietitian to be sure that breakfast is a part of our day. Not being the kind of people that are content with a bowl of this or just your basic eggs and toast has forced inspired me to be a bit more creative in the mornings.
Both my wife and I are pretty big breakfast burrito fans, but even that gets a bit old after a while. I knew I needed to use up those last two tortillas in the fridge, but didn’t really have a huge desire to just go with eggs, salsa and cheese… Again.
Closer inspection of the fridge gave me the answer in the form of some sweet Italian sausage and fresh Parmesan. The rest is history. Or it was about three minutes after it was done. These are fabulous alternatives to the basic breakfast burrito, with a tiny flair of Italy tossed in for fun.
Ingredients:
2 Italian sausage links, peeled and crumbled
2 cloves garlic, minced
1 tbsp tomato paste
3 green onions (scallions), including whites, sliced thin
3 eggs
3 tbsp milk
2 large flour tortillas (or 4 small)
1 tbsp extra virgin olive oil
Salt and Pepper to taste
Fresh Parmesan cheese, grated
Method:
Sauté sausage and olive oil in medium skillet until no pink remains. Add garlic and sauté until just golden. Add tomato paste and scallions, cook for 1 minute, stirring frequently.
Beat eggs and milk together with some salt and pepper, add directly to sausage mixture and cook until desired consistency. Remove mixture from heat.
Heat tortillas on griddle or on a baking sheet in the oven until warm and pliable. Place 1/2 of the mixture (or 1/4 if using smaller tortillas) in center of each tortilla. Sprinkle liberally with Parmesan cheese. Wrap by folding 1/2 over mixture, then folding bottom up. Roll tortilla in direction of open flap.
Garnish with parsley, cilantro or green onion tops, sprinkle with Parmesan.
Serve warm and enjoy.
What I would have done differently had I thought of it at the time:
I really don’t know. Maybe popped a bottle of canned marinara and cooked it with the sausage… I was too busy gobbling this thing down to worry about it.
Jerry is the epitome of cooking without a plan. As a matter of fact, he secretly wishes he could participate in an Iron Chef America episode, simply because it is one place where he wouldn't feel at all out of place. Not knowing the ingredients beforehand doesn't make him nervous at all. Of course, the reality is that he'd probably lose and look entirely foolish, but hey, it would still be fun!
