Eggs Morris

What does the king of cooking blindly do when he’s in a hurry to get his wife out the door with a full stomach, but finds that everyone, including himself, is tired of the “same-old same-old?” Well, he looks in the fridge and the freezer, smiles and rearranges a classic southern dish for a bit more of an upscale feel.Whether it’s early and you’re headed for work or a lazy Sunday at home, this dish is sure to help you greet the day with a smile, and it can be on a plate in less than 20 minutes!

I suppose it could be called a poor man’s Eggs Benedict, but that title is already held by the egg McMuffin, so I decided name it after my wife, using her maiden name.

Cheese Sauce:

Follow recipe for a standard béchamel with the following additions:

¼ tsp ground mustard
½ cup shredded cheddar cheese

Add ground mustard to sauce with flour, salt and pepper. After sauce has boiled 1 minute, stir in cheese by thirds, allowing each addition to incorporate fully before adding next third.

Eggs Morris

Ingredients:
(serves 4)

8 frozen hash brown patties
8 large eggs
2 ham steaks cut in half or 4 slices processed ham approximately ¼” thick
1 cup cheese sauce (See Above)

Method:

Cook hash browns according to manufacturer’s instructions. Add ham slices to oven during last 5-10 minutes of cooking.

Prepare the cheese sauce according to the recipe above.

Lay out two of the hash brown patties, top with ham and two fried eggs. Drizzle with cheese sauce and serve immediately.

What I would have done differently had I thought of it at the time:

I would have added a bit of cheese on top of the hash browns before topping with the ham.

Note: the serve immediately part is not a joke. The cheese sauce as listed sets very quickly and loses any velvety appeal that it had when it was fresh, and the hash browns will steam under all that cheesy goodness and lose their crisp texture, which is essential for good contrast.

    Wow.. that’s a great idea and a fantastic recipe!

    Unfortunately, we don’t eat breakfast during the week.. we’re the type that fills up on coffee and maybe a yogurt or banana grabbed as we run out the door. Occasionally though, we do breakfast on lazy Sunday mornings.. this will be the next breakfast we have, for sure. =)
