
One would think that after running a food blog for over a year and a half, I would have already managed to post all of my favorite chicken recipes. I certainly thought so. I mean, how many different recipes did I have in my arsenal when I started? How many could I have had?
Apparently, a lot more than I thought.
When I started writing this, I figured I’d show off a few of my faves, especially those from childhood. I opened the chicken category and went looking through the entries…
To find that I have not posted a single one of my favorite childhood chicken recipes!
Oh, sure. I’ve posted some good recipes, even a few that I would consider great, but that doesn’t change the fact that I’ve overlooked at least ten recipes that were staples in my home throughout my formative years. I just can’t believe that i have yet to post these things that I still hold so dear to my heart, not only as reminders of time with my mother and my family, but as the first glimpses of the wonderful and nearly mystical culinary star that chicken really is.
Chicken is more versatile than any other protein in the kitchen, save perhaps tofu, which I am unexperienced with. As a matter of fact, it’s so wonderful that we associate any flavor we can’t quite define with it. You know, like when someone says that frog legs “taste like chicken”. (They don’t, but hey, some people think they do.)
So while this post is about my thirteen favorite chicken recipes to date, it most definitely lacks my all-time favorites. This, my friends, will be corrected in due course. An oversight this heinous must be rectified, and it will be. But not until after I’m done with this particular post…
Thirteen of my Favorite Chicken Recipes (So Far).
1. Roast Chicken With Sweet potatoes, Onions and Garlic

You’ve got to start somewhere, so why not with the perfect roast chicken? Even though summer’s still in full swing, I’m starting to feel the need for something that’s cooked low and slow in a nice hot oven with some root veggies and a heavy sauce somewhere on the side… Ahhh comfort foods!
2. Chicken Satay …

This one just makes me smile every time I think of it. In fact, I may just have to make some in a day or so….
3. Spinach and Mushroom Stuffed Parmesan Chicken Thighs
Inspired by Wolfgang Puck, eaten by us, every second enjoyed! I actually make variations of these quite often.
4. Chicken Tenderloins with Dilled Havarti and Spinach

Just a tang of dill, oozy cheese and a bit of bitterness from the spinach… What could be better?
5. Dirty Rice

At heart I’m a Southern boy and it doesn’t get any more Southern comfort than Dirty Rice and some collard Greens. Just fabulous!

For me, this is the ultimate in “I’m not feeling all that great” foods. Just curl up with a bowl on the sofa and let your cares melt away.

An experiment gone completely right. I can’t begin to describe how perfect this one was. Take a chance and light up your kitchen.

So far for the year, this is the clear winner. My wife has asked for it again and again. I’m only too happy to oblige her, since this really has to be just about perfect.

I don’t understand how anyone possibly decide on ONLY 13 favorite poultry recipes…for me, it would have to be at least 100…how can you decide between fried chicken, all the varsities of BBQ chicken, including beer can chicken…Chicken Cacciatore, Chicken Marsala, General Tao’s Chicken, Kung Pow Chicken, chicken and dumplings, all of the different stuffed chicken recipes, Turducken that I made last Christmas, chicken sautéed with mushrooms and garlic, deep fried turkey with I did for the 4th of July, or the spicy orange chili mustard glazed BBQ chicken I made last night. Or a smoked turkey or chicken (smoked a turkey for Thanksgiving) or a chicken-apple sausage, lightly smoked or chicken fricassees, Coq au Vin, Pheasant Cacciatore, just name a few!

Hey, nice round up of recipes…how did you get that chicken to cooperate with you?
one thing I like to do often is a simple roast chicken. Dry the skin and throw in a few lemon wedges, some rosemary or other fresh herb I have lying around, and a few smashed garlic cloves. Salt and pepper…1 hour later, juicy heaven…
Try it, I think you’ll like it..plus the carcass then makes killer soup.
