If there is one Christmas dinner that springs to mind before any other in the collective consciousness of the people of several continents, it has to be the dinner shared on Christmas Day by the Cratchit Family in the classic novel &#8220;A Christmas Carol&#8221; by none other than the great Charles Dickens. This meal embodies the spirit of Christmas more&#8230;]]></description>

<p>If there is one Christmas dinner that springs to mind before any other in the collective consciousness of the people of several continents, it has to be the dinner shared on Christmas Day by the Cratchit Family in the classic novel &#8220;A Christmas Carol&#8221; by none other than the great Charles Dickens. This meal embodies the spirit of Christmas more than any other in literary history, as does the tale itself.  This year thanks to the kind folks at foodbuzz, I had the honor and privilege of recreating this meal and sharing it with all of you.</p>
<p>This post really should be entitled &#8220;The Cratchits&#8217; Christmas Dinner&#8221;, as it is as faithful a reproduction of the meal shared by the Cratchit family as is possible given my local resources and interpretation of the original manuscript.  Unfortunately, Mr. Dickens himself used that title when portions of &#8220;A Christmas Carol&#8221; was republished as short stories and so I chose not to steal his words for my own use. It could also have been titled &#8220;A comedy of errors and disappointments that really didn&#8217;t turn out disappointingly at all&#8221;, but that would have been rather long and drawn out, don&#8217;t you think?</p>
<p>Having said all that and given proper thanks to the folks that gifted me with the opportunity to try my hand at the single most iconic meal in the annals of Christmas itself, I&#8217;ll get into the meat of the thing, so to speak.  Please follow along with me as I follow in the tradition of Mr. Dickens and the Cratchits themselves. The story is full of twists and turns, a bit of drama and sorrow, but in the end, It turns out that I really do find the Christmas spirit in my heart (and a bottle or two), so the story does in fact have a happy ending.</p>

<p>&#8216;Tis the season once again.  with that comes the call for cookies, candies and other sweets to thrill and delight both young and old. (And not-so-old, as well.)  This year I&#8217;m trying to focus on the flavors of the season with a highlight on seasonal fruits, berries nuts and whatever else I can find that fits well with winter fare.  These cookies fit the bill for all of these things.</p>
<p>Cranberries are everywhere at this time of year, both in their plump and tart ripe state and in their dried form.  It was the latter that inspired me to make this recipe, which is adapted from one I found at <a href="http://bakingbites.com/2006/12/cranberry-orange-cookies/" target="_blank">Baking Bites</a> and yet another I found somewhere else, but can&#8217;t remember at the moment.</p>
<p>These may not be traditional Christmas cookies for most people, but I think for my family they have just found a permanent place on my &#8220;must bake for the Holidays&#8221; list, along with my Aunt Thelma&#8217;s Tea cookies and my mothers peanut butter cookies.  they are crisp, light, pack a ton of flavor into every bite and were adored by my kids (and the neighbor&#8217;s kids).  Anything that gets the whole family rummaging at the cookie jar is a surefire winner for me, especially when the batch makes 48, so there is no need to double the recipe.</p>

<p>The holidays always bring about the need for great main courses, lavish tables and &#8230; Snacks.  Lots of snacks.  While there are hundreds that can be made to please the kiddies and the less adventurous in the house, there will always be a few people hoping to find something just a bit different to nosh on while the family meal is being prepared, or afterward while friends and family reminisce about the year past and tales of childhood.</p>
<p>This year I also had to consider snacks that would ship well so that I could send them off to my lovely wife in Turkey.  One obvious option was Tea Cookies, and we did make a batch or two of those to send her way, but one of my fondest food memories with her was her reaction to the <a href="http://www.cookingbytheseatofmypants.com/recipes/spicy-salt-roasted-peanuts/" target="_blank">Spicy Salt-Roasted Peanuts</a> we made around Valentine&#8217;s day last year.  she could not stop eating these delectable little morsels, though she complained mightily about it.  They were the perfect choice.</p>
<p>The thing is, I hate predictability.  I wanted to add a twist to the nuts she already knew and loved to go along with the ones she remembered.  Since Curry is a very large part of the rub I use on our Thanksgiving and Christmas birds, I thought that it would be an appropriate choice&#8230;  I was right.  These are amazing.</p>

<p>Recipe ideas can come from anywhere.  This post is proof of that.  The idea for baked apples was driven into both my head and that of my oldest son one afternoon during an episode of &#8220;Little Bear&#8221; that the youngest was watching on NickJr.  It only took one mention of <em>honey baked apples</em> to have us both drooling over the concept.</p>
<p>Luckily for us, Fall is upon us and with it are apples.  The stores are overflowing with fresh, delicious apples of every variety, shape and color, all perfectly ripe and in-season, so getting the right ingredients was no chore at all.  The only difficulty was in coring the apples&#8230; Or it would have been, if I hadn&#8217;t had two very eager kids helping me with it.</p>
<p>So here I present to you the new favorite dessert in the Russell household.  A dish that has been given nods of approval from all but my youngest, the nuggetarian. (I couldn&#8217;t get him to try it.  Had he done so, I&#8217;m sure he would like it as well.)  It&#8217;s cold outside folks.  Isn&#8217;t this the perfect way to end a long day?  Just this and a Muscatto and all is well.</p>

<p>Summer is here and as much as I love chocolate in all its many incarnations, warm weather calls for treats that are a bit lighter and brighter than my favorite winter fare.  The higher temperatures also mean we&#8217;re less likely to gravitate towards large treats, preferring instead to savor smaller bites and brighter flavors.  This dessert fits that bill in all ways and more.</p>
<p>These may be mix based, but I guarantee that you&#8217;ll overlook that once you&#8217;ve gotten a taste of these little explosions of flavor. There is simply nothing here not to love. Every bite is an immersion in all that is wonderful about lemon.  Tart, sweet and tangy with just a hint of saltiness in the glaze. Eating one of these bars is sort of like drinking lemonade mixed with rocket fuel.  It&#8217;s an unforgettable experience.</p>

<p>When we invited our friends over for Christmas this year, I only asked for one thing.  I asked for the apple pie pictured above and the recipe that went with it.  The fact that the pie dish pictured was also given to us was a bonus (and a very nice one, thanks guys!) but the real gift is a pie that I will gladly make and share with friends and family for the rest of my life.</p>
<p>I know I say this all the time, but the simple things in life are usually the best.  This hods true with food as well.  Overcomplicating a recipe usually does little to enhance the flavors of the food, it just adds extra steps that are not necessary. (There are, of course, times when this rule does not hold true, but this is not one of those cases.)</p>
<p>This has to be just about the simplest recipe for a German apple pie I have ever seen.  There&#8217;s no fuss, nothing picky or finicky, just a good-solid recipe that tastes far better than you would expect for the ingredients used.  In my opinion this is true perfection.</p>
<p>I know that statement may ruffle a few feathers.  Everyone has their own favorite apple pie recipe.  Of those, I&#8217;m sure that 99% would be a pie that I would enjoy as well.  But for me, Brie&#8217;s German Apple Pie is quite simply the pie I will crave whenever I think of apple pie in the future.  I&#8217;ve been spoiled, but I&#8217;m not complaining.</p>
<p>The recipe as given to m is only for the pie filling.  I&#8217;m not sure if she made her own crust or if she used a prepared crust, so I&#8217;ll leave that decision up to you.  If you&#8217;re bent on making your own pie crust, the best recipe I&#8217;ve ever seen for one is <a href="http://inncuisine.com/rave-reviews/10-easy-steps-to-perfect-pie-crust/">here</a>. I am not a baker by nature, so if my wife wants to make a crust from scratch, great!  If not, I&#8217;ll use what I can get.  With this filling adorning it, it could be shoe leather, I really wouldn&#8217;t care.</p>

<p>O.K. I know I&#8217;m late with this one, but I swear it&#8217;s for a good reason, which I&#8217;ll get to at the end of the intro&#8230;</p>
<p>This round of the 12 Days of Cookies takes us back to 1977.  The radio and 8 tracks all over the country were playing <em>Barracuda</em> by Heart and <em>Back in the Saddle</em> by Aerosmith.  The top draw in theaters was <em>Close Encounters</em>, Disney&#8217;s <em>The Rescuers</em> and a movie that broke all the rules without breaking any at all, a little number called <em>Star Wars</em>.  We all crowded around the Television at night to watch such wondrous entertainment as Laverne and Shirly, Happy Days and M*A*S*H. Gourmet Magazine proclaims the Irish Coffee Crunchie it&#8217;s top pick cookie from all the recipes printed that year, they have good reason to do so.</p>
<p>These little bites are absolutely fabulous.  They are über crunchy, slightly sweet and have just the slightest hint of the whiskey that went into their making.  They&#8217;re sure to satisfy both young and old, but I think an adult palate will appreciate them more.</p>
<p><em>(Yes I said young and old.  With a total of 4 tsp. whiskey used in the recipe and 1/2 of that baked, you aren&#8217;t looking at enough in the way of content in 18 cookies to bother with.  Worry about the sugar, not alcohol.)</em></p>
<p>Will I make them again.  Oh, yes!  Often.</p>

<p>Now, as for why this post is a day out of sync&#8230;  Last night as I was waiting for the icing to dry I got word from my wife.  We&#8217;ve got orders.  She&#8217;s going on a 15 month tour in Turkey by August of next year.  The kiddo and I will be heading for California for at least the time she&#8217;s gone. (Hopefully we&#8217;ll have a follow-on there so that we only have to do the move once, but we&#8217;ll see.)  It&#8217;s bittersweet news, but it&#8217;s definitely time for us to leave this place, so even with the imminent separtation, we&#8217;re both very happy.</p>
<p>I promise that I&#8217;ll get caught up this weekend.</p>
<p>Now go make these cookies&#8230; And don&#8217;t nip on the Jameson until you&#8217;re done with the bakin&#8217;!</p>

<p>Day three of the Twelve days of cookies finds us in the 80&#8217;s again, but this time in the late 80&#8217;s. The charts were rockin&#8217; to The Escape Club singing <em>Wild Wild West</em>, Bobby McFerrin released <em>Don&#8217;t Worry, Be Happy</em>, and Bon Jovi (Who rocks, occasionally) released <em>Bad Medicine</em>. The Big Hair Craze was fading into the mullet, and The car of choice for most people ws beginning to look something like the modern SUV.</p>
<p>According to Gourmet magazine, the best cookie of the year was the pistachio tuile.  They had this to say&#8230;  But they were wrong:</p>
<p><em>What petits fours were to the well-heeled in the 1950s, tuiles were in the 80s, garnishing every dessert plate in the land. Still, the potato-chip-thin cookie studded with pistachios is a combination that will never go out of style. Drop level tablespoons of batter, then spread into a thin 3-inch round and bake at 350° F for 6 to 9 minutes.</em></p>
<p>Umm, that was supposed to be teaspoons, not tablespoons, people&#8230; Geez.  Of course, that&#8217;s not the only thing they got wrong.  Like &#8220;not everyone loves Amaretto.&#8221;  I&#8217;m one of those people, and these things taste like Amaretto, so not my favorite thing ever&#8230;  Not by a long shot.</p>
<p>My wife loves them however, so they have redeeming qualities.  In all they&#8217;re pretty simple to make, taste like half a tiramisu (add a little cream and you&#8217;re there).  For me, any other extract in the world would probably make these things good, but the almond extract flavor is just too much.  Perhaps with hazlenut extract I&#8217;d love them, but that wasn&#8217;t the recipe.</p>
<p>So if you like amaretto I&#8217;d say give them a 9.  On my personal scale they rate a solid 4.</p>
